About Tyler's Macaroons

Tyler recently discovered the joy of coconut macaroons. I made that discovery last year. Just thought I'd share my recipe:

2 (14 oz.) bags of angel flake coconut (Baker's brand recommended)
1 (14 oz.) can of sweetened condensed milk
2 teaspoons of vanilla extract
1.5 teaspoons of almond extract
1 bag of semi-swet chocolate chips

In large bowl combine coconut, milk, and extracts. Mix well and refrigerate for at least 1 hour.


Preheat oven to 350 degrees. Roll teaspoons of mixture into small balls - make balls as compact as possible so they don't open/fall apart while baking. Place on baking sheets and bake for 11 minutes or until lightly browned on top.

Allow macaroons to cool for 2 minutes on pan, then remove and transfer to wax paper to finish cooling.

Once cooled, melt chocolate and dip bottoms of macaroons in chocolate. Place candies on a cookie sheet lined with wax paper and allow to cool in the refrigerator. Store in an airtight container in the refrigerator or freeze for later.

Not much posting going on

I'm not an avid blogger like some, but I realize that my posting has significantly dropped off recently. This is, in part, due to my vertigo issues and not wanting to spend a lot of time on the computer (it adds to the symptoms), but also stems from the feeling that I don't have a lot to say.

Oh well. Blogging will still go whether or not I add my voice to the mix!
